Spanish Omelette


This is my version of a Spanish omelette. It’s an all in one meal that is more substantial than your average omellete. Quick and easy to prepare and tastes delicious!
I like mine spicy but you could leave out the spices for a milder flavour.
Serve with a green salad.
  • 2 eggs & 1 egg white
  • 1/2 cooked sweet potato cut into cubes
  • Handful fresh spinach
  • 3 cherry tomatoes cut in half
  • 6 pitted black olives
  • 1/2 cup cooked soy mince or cooked turkey mince
  • Few cubes of feta cheese
  • Fresh basil
  • 1 tsp coconut oil
  • Salt, pepper, paprika, chili flakes
Heat a frying pan on medium heat with coconut oil, place in spinach and let cook down for a few minutes. Add sweet potatoes, cherry tomatoes, mince, pinch of salt, pepper and spices and cook for a further 2 minutes. Add in the eggs and stir until all ingredients are combined in the pan. After a few minutes the omelette will be cooked on the bottom. Dot over the feta cheese and olives and transfer to a hot grill to finish off cooking the top.
Slide omelette onto a plate and top with torn fresh basil.

Banana Apple & Cinnamon Muffins




YES, you can have these for breakfast!! Yay! They are also delicious with an afternoon coffee, or just anytime you fancy one.
These muffins contain NO added sugar, the sweetness comes from the fruit and they’re gluten free too.
So what are you waiting for?! Get into the kitchen and get baking…
Yields: 12 mini muffins or 9 regular muffins
  • 2 eggs
  • 2 bananas
  • 1 tbsp coconut oil
  • 1 1/2 cups oat flour (made from blending oats)
  • 3/4 tsp baking soda
  • 1 chopped apple
  • Drizzle of honey (optional)
  • 1 tsp cinnamon
  • pinch of sea salt
I use a silicon muffin tray as there's no need to oil and they pop right out, otherwise lightly oil muffin pan. Preheat oven to 180c.
Combine eggs, banana & coconut oil in a bowl and mash together.
Add all other ingredients and mix together.
Divide evenly between muffin cups. (Optional - drizzle a little honey on top of each muffin) Bake for 20 minutes, then leave to cool before removing from the tray.
  • Cook time: 20 minutes

21 DAY FIX EXTREME - THE RESULTS!

Love This Program!

I DID IT!
21 days of workouts with no treats/cheats at all! Was it tough?  At times, but was it worth it?  HELL YEAH!!
Let me tell you when I first sat down and started to meal plan using the containers, it took me hours, but once I got into the swing of it, it was really simple.  And those little coloured containers are the game changer right there!
I have been doing Beachbody workout programs constantly for 2 years now and I have never got results like this in such a short space of time.

I know you're dying to see the results so here they are...eeek:

These before pictures are 2 weeks after finishing Insanity Max:30 where I had already lost 5 inches and 2 lbs.

These after photos were taken this morning and I'm really pleased with my results.
After just 21 days I have lost 3 inches and 6 lbs!
Now considering I didn't have lots of weight to lose, that's craazy good!  And I have the smallest waist and hips I've ever had in my adult life!

Waist: 25 1/2 inches
Hips:  33 1/2 inches

You know the other amazing thing?
I have weighed less but I've never been so toned or small!  I'm all about the inches and the muscle tone, not the number on the scale.


I have noticed that I get my best results through workout programs that include weights, this one and P90X.  I still love my cardio programs ( Insanity, love you!) but lifting weights gives me the definition I'm after.

And don't worry about getting hungry, you get plenty of food to eat, it's just the right type of food.  Get meal planning and prepping, stock up on tupperware and you can't go wrong.  Oh and I'm a veggie, so I had the added extra of finding ways to get enough protein in without eating meat. There were a lot of eggs consumed....(and they have they're side effects...ppffttt!...)

I'm having a few days off and enjoying a big glass of red tonight and I've saved a chocolate Easter bunny too. Ohh, I bet they'll taste like heaven...

Then I'm jumping back on the 21 day fix extreme train and doing it all again in the lead up to my Birthday.
I'm going to be in the best shape of my life, not bad for a Mum who will be 40 in a few weeks?!...

If you're thinking if this is the right program for you, think no more, just do it.  I promise you will get amazing results IF you stick to the plan.  Commit for 21 days and watch the magic happen!

21 DAY FIX EXTREME - Week 1 review.

Here I go, Day One!

On Monday I started Beachbodys newest program 21 Day Fix Extreme.  It's extreme because for 21 days there are NO treats or cheats...eeek... just clean whole foods that you pop into your little colour coded containers.  The containers are actually pretty awesome and are so simple to use.  Each colour is a different food group:

Red = Protein      
Green = Veg
Yellow = Carbs
Purple = Fruit
Blue = Healthy Fats
Orange = Seeds & Dressings
Tsp = Oils & Nut Butters

You then work out your calorie bracket and from there find out how many of each container you are allowed each day.  
The key is all in the meal planning and prepping. You really have to sit down on a Sunday, plan out your meals then start prepping.  It takes a bit of time, but it's the only way you are assured of not slipping off track.  If it's there and ready to grab, you're going to succeed!

The first few days I did feel a little bit hungry, but after playing around with snacks and eating every few hours I got into the swing of it.  I can even have my favourite snack, strong coffee with peanut butter, banana and cinnamon on wholegrain toast.  So I'm not really changing what I eat, just some of the portion sizes and boy did I eat too much pasta...oops!

The workouts are all 30 minutes long and most of them involve weights, yey!  (I have missed lifting weights) 
This is my first program with trainer Autumn Calabrese and I think she's fab, her body is AMAZING!  That's motivation right there!  
As my first week is coming to an end, I'm sore, and that's a really good thing!  It's working... 
Doing these workouts along with the dialled in nutrition,  I can feel it already.  I'm really excited to see the results you can have in 21 days if you work hard and eat clean, portioned controlled meals.

INSANITY MAX:30 My 60 day results!


I can't actually believe that the 60 days are over.  That was the fastest 2 months... it really went by in the blink of an eye!  
So now that it's over I can reveal my results, my thoughts and what I got out of the whole experience.

Ok, so this was one of my favourite workout programs I have ever done!  It pushed me like no other workout ever has.  I have never been so emotionally involved in a program since the first time I did the original Insanity.  I screamed, shouted, even shed a tear at one point because I really pushed through and felt so proud of myself!
At the end of this program I felt really strong, my endurance was through the roof!  In my last week I was pushing so hard, I had a few days where I did not Max Out at all!  The stamina Max:30 gives you is incredible!
The physical results though were a little unexpected. This is my before and after pics:



In total I lost 3 lbs and 5 inches.  Yes there are noticeable changes but I would have liked to have seen more physical changes in my body.  
I'm not going to sit and dwell on it, I loved the program and will defiantly do it all again. (Cant wait to get my Max:30 T shirt to add to my collection!)

So maybe I've hit a bit of a plateau and need to switch it up a bit.  Next on my agenda?...

Eeek... excited!!

The 21 day fix extreme!  Excited to add weights in and get my nutrition on point with my little containers.  I will officially start this on the 16th March and I'm going to do the extreme plan for 21 days then going in for a second round with the competition plan!
This will take me up to my birthday, which will be the big 4 0!!  I'm going to get in the best shape of my life.  Total commitment required!



I'm so thankful I found these workouts!  Beachbody workouts have truly changed my life.  The people I have met through doing these programs are lifelong.  Most of them I will probably never meet in person, but we all have the same goals and keep each other accountable every single day.

Homemade Clean Protein Bars and Cookies

Homemade protein cookies and bars.

How many of us crave that 4pm cookie or biscuit? ( Hands up!) Me!!  I pop on the kettle, make myself a nice cup of tea and really want something to go with it.
Now when I'm out shopping I sometimes pick up a few all natural health bars but that can get quite expensive.  My favourite ones at the moment are Nakd bars ( the bakewell tart flavour is to die for..) but if I'm needing a bit of extra indulgence Pulsin bars are the way to go.  They taste so good, especially the chocolate ones, so rich and yummy.... so I set out to make my own version.

I started off with a set recipe then added a few twists of my own.  I kept it all clean and you don't have to add the protein powder if you don't have any, you could make them into regular bars and cookies.
Another little fabulous bonus about this recipe,  I make up one batch then divide it into two.  With one half I make them into cookies and bake them in the oven and with the other half I shape them into bars and pop them in the freezer!  How cool is that??  One recipe for two gorgeous treats!

Ok, so here's the recipe:

1 cup oats (ground to flour in Nutrabullet/Ninja)
1 cup oats
1/2 tsp salt
1 tbsp chia seeds
1 cup cooked quinoa
1 cup dates, chopped
2 tbsp coconut oil
1 flax egg (1tsp flaxseed mixed with 3 tsp water)
1 tbsp honey
2 large tbsp peanut butter
1 scoop protein powder (optional)

Mix all dry ingredients together.  Melt coconut oil and combine with flax egg and honey. 
Mix into the dry ingredients, add quinoa, peanut butter, dates and stir together until it all comes together.
Divide mixture in half.  Place scoops onto a baking tray and flatten into a cookie shape. 
Bake at 180c for 10 mins for a soft cookie or for a crisper texture turn oven down to 150c and bake for a further 10 mins.
With the other half of the mixture, shape into individual bars, wrap in tin foil/aluminium and store in freezer until you're ready to eat.




It really is a simple, cost effective way to satisfy your sweet tooth without the guilt.

My Nutritional Therapy Diploma!!

Yep, I framed it!!

So this week marks a new beginning for me.  I'm now qualified as a Nutritional Therapist.  I've been working towards this since last year and I'm so excited that I have finally achieved it!

This is truly what I want to do, help others live a better, healthier life through making better choices.  I want to show people that it REALLY does matter what you put into your body. It's not just about gaining or losing weight, but what you eat and drink effects every part of you body and how you feel.

It really does matter what you eat!



I'm working towards building my own website which should be up and running in the next few months.  At the moment it's a work in progress, with lots of ideas running around in my head.  I can't wait to see it all come together.

There will be a chance to work with me in a group setting with lots of support or a more individual one on one basis which will be more in depth.  I'll keep you all posted on here and on my Health and Fitness page over at Fit For Life.
